Chef Prem K Pogakula, Executive Chef at New Delhi's The Imperial hotel, shares two recipes to add colour to your Holi celebrations.


Bhang Ke Pakore

Serves: 4

Ingredients
Gram flour: 250 gm
Salt: 15 gm

Turmeric powder: 10 gm
Chilli powder: 5 gm
Chat masala: 10 gm
Bhang paste: 3 tsp
Spinach: 700 gm
Oil for frying: 1 ltr

Method
-
Wash and shred spinach leaves and collect in a mixing bowl

- Add rest of the ingredients and mix well. Sprinkle water with hand
- Mix until spinach leaves are coated with gram flour
- Heat the oil in pan
- Shape and deep fry until golden colour and sprinkle the chat masala on top

Pista Malai Mewa Ki Creamy Crushed Kulfi

Ingredients
Chilled fresh curd: 2 cups
Double cream: 2 cups
Sugar: 10 tbsp
Cardamom powder: 1 tsp
Ice cruces to keep it chilled
Chopped nuts: 2 tbsp for garnish
Pistachio paste: 3 tbsp
or
Saffron: 2gm
or
Almond paste: 3 tbsp
or
Gulkand: 3 tbsp

Method
- Blend all the ingredients in a blender with ice cubes till it forms a crushed consistency
