Bengaluru celebrates Christmas with a twist: 'Tis the season of reinvented eggnog, mulled wine and toddy

The city's pubs and bars are stirring up something different with the season's classics.

BENGALURU: There is nothing like a glass of mulled wine when the air starts to feel crisp. Not many, however, have the luxury of time to prepare the season’s beverages at home. Pubs and bars are busy stirring up these winter cocktails now.

The season’s classics like eggnog, mulled wine and toddy are receiving a fresh twist in the city. Inspired by the ‘tadi’ consumed in rural India, chef Aniket Das of Aloft Bengaluru Cessna Business Park has created a toddy menu that includes bourbon whisky toddy and Indian spiced toddy. The menu also has non-alcoholic toddies infused with orange, tea, grapes, coconut and rice water.

“Tadi is an organic beverage, which villagers consume once it ferments with the first rays of the sun. We have recreated it using winter fruits like berries, oranges and tender coconut. The idea is to bring back a local and cultural experience with a modern twist,” says Das. Bengalureans crave novelty, he says.

Mulled wine, too, is being shaken and stirred with different infusion. A housemade mulled wine got an unexpected gin, apple spice syrup, lemon and cooling mint tweak at Big Brewski Brewing Company. Spice sugar, used traditionally in plum cakes, is being infused with brandy to make mulled wine at Arena restobar. Mulled wine has the fruity notes of a sangria at Monkey Bar.

On the other hand, sangria is being muddled with winter fruits and herbs instead of apples at The Fatty Bao. “December is the perfect season for wine. Sangria is getting a refreshing taste with winter fruits like guava, plum, strawberries, sweet lime and housemade syrups and wine,” said executive chef Prashanth Puttaswamy.

The other season’s favourite, eggnog made with brandy, is being given a twist with rum and whisky at The Reservoire in Koramangala. They are even making mulled wine at the guests’ tables. “Trend and tradition is the new fruitful combination this winter,” said cofounder Prathik Shetty.

Food blogger Nikhilesh Murthy has been indulging in cocktails like apple pie daiquiri, German mulled wine or Glühwein and is looking forward to a red-velvet ale at Xoox Brewmill. Attributing the trend to the city’s social media craze, Murthy said, “Social media is the primary driver for innovation, as customers will post images of these offbeat cocktails and watering holes will get the eyeballs in the last two weeks of December.”
