Zarda Pulao


Preparation time: 35-40 mins
Serves: 3-4 person


Ingredients:
Basmati rice (soaked in water for 30mins) - 500 gms
Ghee: ¼ Cup

Cashew Nuts: 8 gms
Almond: 5 gms
Raisins: 2 tbls
Dry Coconuts: 2 tbls
Green Cardamom: 1 gms
Cloves: 1 gm
Water: 1 Cup
Saffron (soaked in water): 1 gm

Sugar: ½ Cup

Method:
- In a large vessel, heat 2 tbsp ghee, and roast 8 cashew, 5 almond, 2 tsp raisins and 2 tsp dry coconut

- Roast to golden brown on low flame and keep aside
- In the remaining ghee, add 2 pods cardamom and 4 cloves
- Then add 1 cup water & saffron. Mix well and make sure the saffron is mixed well
- Add 1 cup soaked basmati rice (30 minutes) and mix well
- Cover and cook on medium flame for 10 minutes. Mix gently till rice is half cooked
- Add ½ cup sugar, 2 tbsp ghee and roasted dry fruits
- Mix gently till sugar melts. Cover and simmer for 5 minutes
- Stir in between to prevent from burning
- Keep stirring until the rice is cooked. Do not overcook as the rice may turn mushy
- Serve zarda pulao hot, and garnish with few chopped nuts

Pineapple juice: 10 ml

Method

- Add all ingredients in a cocktail shaker and mix for 10 seconds
