A pizza and panna cotta with a Tricolour twist for your R-Day celebrations

While the festivities may be muted, you can mark the day and celebrate the nation in your own way. Why not bring the colours of the National flag to your table, and prepare a scrumptious meal.
So put on your chef's hat, and try your hand at these Tricolour recipes with a twist.
Wild Rocket and Roasted Tomato Pizza

Ingredients
Pizza base: 1 (12")
Pizza sauce: 50 gm
Mozzarella cheese: 110 gm
Rocket leaves: 60 gm
Parmesan cheese shavings: 60 gm
Sliced baked tomatoes: 60 gm
Olive oil: 5 gm
Method
- Spread the tomato sauce on the pizza base top with mozzarella cheese
- Repeat the process
- Bake in the wood fire oven for 4-5 minutes.
- Cut to desired shape and serve hot
Pistachio and saffron Pannacotta
Serves: 4
Ingredients·
Milk: 1/2 litre
Condensed milk: 2 tbsp
Sugar: 4 tbsp (or as per taste)
Vanilla essence: 1 tsp
Gelatin: 1 tbsp
Pistachio paste: 1 tsp
Saffron: 1 gm
Method
- Boil milk, add condensed milk, sugar as per your taste
- Cook till the sugar melts. Turn the stove off
- Add vanilla essence
- Meanwhile soak gelatin in 1/2 cup warm water for 10 minutes
- Add this to the boiled milk mixture. Stir well
- Divide the mixture into three equal parts
- In one part add pistachio paste and another one add saffron. Mix well
- In glass pour 1tbsp pistachio mixture and keep in freezer for 15-20mins or till it sets
- After orange one sets pour white mixture and place in freezer and repeat same for green one too
- Take out from the refrigerator and Serve chilled
