NEW DELHI: On 550th Guru Nanak Jayanti, indulge in this traditional sweet treat that comes with a twist.

With the flavour of paan and essence of rose, this delicious rice kheer preparation will be a hit with the family. Chef Shivanand Kain, Executive Chef at Jaypee Green and Golf Spa Resort in Noida, has curated this recipe for people with a sweet tooth.

GULAAB PAAN KI KHEER


Ingredients:
Milk Full Cream: 1 ltr
Basmati Rice: 100 gms
Green Cardamom: 10 gms
Cashewnut (broken): 20 gms

Chironji: 10 gms
Raisins (kishmish): 20 gms
Beetle (paan) leaf: 5
Gulkand: 50 gms
Sugar: 100 gms
Almond (for garnish): 10 gms
Pista (for garnish): 10 gms
Beetle (paan) leaf (for garnish): 2

Rose Petal (for garnish): As Required

Method:
- Boil milk in heavy bottom pan. Keep stirring and add cardamom

- Soak rice for half an hour
- Add rice in milk
- Keep stirring till rice is cooked and milk is reduced
- Add cashewnut, raisins, chironji and sugar, and stir
- Keep aside to cool
- Add puree of gulkand and shredded paan patta
- Garnish with rose petals and paan leaves
- Serve chilled
