The festive season is incomplete without mithais. With Karwa Chauth celebrations across the country and Diwali knocking at our doors, traditional Indian desserts have become the star of the show. But most of these sweet treats are often loaded with refined sugar and calories. That doesn’t mean you have to skip eating your favourite sugary delights. Mumbai nutritionist Vanshika Khurana recently posted a video on Instagram, sharing the recipe for a crumbly, melt-in-your-mouth milk cake bar, packed with 10 g of protein.

Milk cake bar: Ingredients required

  • 700ml toned milk
  • 200g high-protein paneer
  • 1 scoop unflavoured yeast protein
  • 1 tbsp ghee
  • 40g zero-calorie allulose sweetener
  • 1 tsp cardamom powder
  • ½ tsp nutmeg powder
  • A pinch of salt
  • Water as required
  • Maple syrup, date paste, or jaggery (optional, for colour)

Milk cake bar: How to make

To prepare the milk cake bar, first you have to add the milk to a pan and let it heat over medium heat. Next, crumble the paneer into the milk and mix well. The cardamom and nutmeg powder goes in next and the entire concoction needs to be stirred uniformly.

After that, add 1 scoop of yeast protein powder and mix thoroughly. In a separate pan, add the zero-calorie sweetener with a little water. Let it bubble for 4-5 minutes until it develops a brown colour.

In the next step, add the browned sweetener mixture to the milk and paneer blend before mixing everything well. Continue cooking the milk mixture, stirring frequently, for around 20-25 minutes until it reduces and becomes thick like milk cake.

Next, add some ghee and a pinch of salt, and once again mix. To achieve a deeper colour, you can add a little maple syrup, date paste, or jaggery. But it is optional. Finally, transfer the mixture to a greased tray and let it cool completely until set.

Now, cut your protein-rich milk cake bar into 10 pieces and serve to guests or enjoy them yourselves when feeling festive solitude.
